The Bikini Cocktail

Makes enough for 10 servings

Ingredients for the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (produces 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

Making the Citrus Syrup: Combine all the items in a saucepan, bring to a simmer, mixing to dissolve. Then, remove from the burner and let it to cool down entirely. Decant to a clean bottle, close it keeping it chilled, where it will keep for about a month.

Preparing the Premix: Combine all the liquid ingredients into one big jug, let it rest for an hour, then strain best through a fine cloth, so it's fully clarified.

To serve: Add 85ml of your batch mix into your stirring glass containing ice, and stir lightly for one minute to chill. Strain into a frosted cocktail glass or equivalent, top with the cranberries and finish using a brief mist of the essential oil over the drink.
